Warming Winter Breakfast

Okay, going a little bananas with Soba Noodles, but they are so Great! – Nurturing, grounding, warming and digests easily. Perfect Winter Food!

Breakfast this morning consisted of:
SOBA NOODLES & GREENS Recipe, 1 Serving
I N G R E D I E N T S :

  • 1/4 package buckwheat Soba Noodles, (buckwheat doesn’t contain wheat)
  • Water or Turmeric & Ginger decocted for added flavor
  • 2 Kale leaves, destemmed, torn
  • Handful: Parsley, Basil & Dill*, chopped
  • 1 tablespoon Ginger & Turmeric, chopped finely (from decoction if using)
  • 1 tablespoon Olive Oil
  • Spices: Coriander, Cumin & Cayenne powder, fresh ground Black Pepper
  • 1 tablespoon Dulse flakes
  • 1 tablespoon Nutritional Yeast (optional)
  • Pinch Sea Salt

1. Bring Water/Stock to boil
2. Add Noodles (broken in half), lower heat to a rolling boil 3-4min.
3. While the noodles cook, place Kale, fresh Herbs, Ginger and Turmeric if using in a serving bowl.
5. When the noodles are al dente, using tongs place the noddles with some cooking water over the greens.
6. Drizzle w/ Oil, sprinkle with Spices, Dulse and Yeast, if using

* Use fresh leafy herbs liberally, they are rich in chlorophyll, and phytonutrients like: iron, folate, Vitamin K, C and A

Excellent hearty breakfast that will increase circulation and provide the body with a variety of vitamins and minerals.
