Catering a party yesterday, the client requested fruit salad for dessert. Eating fruit following a heavy meal is not optimal for digestion - fruits digest quickly and will putrefy the food previously eaten slowing down overall digestion, and possible causing gas – yikes! Anyhow, fruit salad is what was served, so to counteract any discomfort crystalized ginger was served on the side, mint was added to the salad along with a few pinches of black pepper.
Our meals are not always optimally combined, especially eating out. Ayurveda offers us tools to help mitigate any digestive discomfort – in this case warming digestive herbs.
Winter Fruit Salad Recipe
Servings 10
Ingredients
- 1 pineapple, peeled and core removed, cut into small dice
- 2 mangoes, peeled and stones removed, cut into small dice
- 3 Gala apples, cored and cut into small dice
- 1 cup organic blueberries
- 1 handful fresh mint, slivered
Dressing
- juice of 1/2 organic lemon
- zest and juice of 1 lime
- a few grinds of fresh black pepper
Toppings
- 1 cup crystalized ginger, finely chopped
- 1-1/2 cups pistachios, toasted and lightly salted
Combine and gently toss fruits and dressing, serve toppings on the side.
