Raw Cacao Truffles

Raw desserts are just scrumptious, rich in texture and flavor, with these Raw Cacao Truffles, you only need 1, perhaps 2 ; ) to satisfy a chocolate craving – A sure crowd pleaser! They are really quite simple to make, the effort is in rolling the balls, but you will quickly get the feel for it. Let them cool and harden a bit in fridge before enjoying.

RAW CACAO TRUFFLES, Yields 25
I N G R E D I E N T :

  • 1/2 cup Coconut Cream, (i.e. Artisana)
  • 3 tablespoon Coconut Oil, melted
  • 1/2 cup Water, warmed
  • 2 tablespoons Maple Syrup
  • 1 teaspoon Vanilla Extract
  • 2 cups Raw Cacao Powder (optional 1/4 C. to roll finish product)
  • 1/2 teaspoon Sea Salt
  • 1/2 teaspoon Cinnamon Powder
  • pinch Cayenne & Cardamom

In food processor, blend Coconut Cream with wet ingredients. Add and ‘Pulse’ – Sifted Cacao Powder, Salt and Spices. Place pitcher in fridge to firm up, once firm roll into 25 balls, roll in Cacao Powder. Store in fridge.

Note: Use a metal spoon to scoop and help roll truffles; the warmth of your hands, will quickly melt the tasty treats.

Variations: Have fun with this basic recipe and play with flavors like: Spirulina, Fennel, Rosemary, Citrus Zest, Mint or Almond Extract, Cacao Nibs, Goji Berries etc.
