No-Bake Energy Bites with Turmeric

These bright, no-bake energy bites are a simple way to nourish your body while satisfying a craving for something naturally sweet. With anti-inflammatory turmeric, mineral-rich seeds, and fresh lemon zest, they make a wholesome treat to keep on hand throughout the week.

No-Bake Energy Bites with Turmeric

Ingredients
  • 1 cup sunflower seeds
  • 1/4 cup pumpkin seeds
  • 1/4 cup unsweetened shredded coconut plus extra for coating
  • 4  Medjool dates, pits removed
  • 2 tablespoons ground flax seeds
  • 1 tablespoon turmeric powder
  • 1 pinch fine-grain sea salt
  • 2 tablespoons water
  • zest of 2 lemons
  • 1/4 cup unsweetened sunflower seed butter
  • 1 tablespoon coconut oil melted
  • 1 teaspoon real vanilla extract
  1. In a food processor, pulse the first 3 ingredients until medium-coarse. Add the dates, flax and turmeric powder, zest and salt - pulse again. Add seed butter, coconut oil, and vanilla, pulse until the dough comes together.
  2. Make 12 balls out of the mixture and roll them in the extra shredded coconut.
  3. Enjoy right away or store in the fridge (storage instructions below).
Notes: Store in an airtight container in the refrigerator for up to 2 weeks or in the freezer for up to 3 months.
