These bright, no-bake energy bites are a simple way to nourish your body while satisfying a craving for something naturally sweet. With anti-inflammatory turmeric, mineral-rich seeds, and fresh lemon zest, they make a wholesome treat to keep on hand throughout the week.
No-Bake Energy Bites with Turmeric
Ingredients
- 1 cup sunflower seeds
- 1/4 cup pumpkin seeds
- 1/4 cup unsweetened shredded coconut plus extra for coating
- 4 Medjool dates, pits removed
- 2 tablespoons ground flax seeds
- 1 tablespoon turmeric powder
- 1 pinch fine-grain sea salt
- 2 tablespoons water
- zest of 2 lemons
- 1/4 cup unsweetened sunflower seed butter
- 1 tablespoon coconut oil melted
- 1 teaspoon real vanilla extract
- In a food processor, pulse the first 3 ingredients until medium-coarse. Add the dates, flax and turmeric powder, zest and salt - pulse again. Add seed butter, coconut oil, and vanilla, pulse until the dough comes together.
- Make 12 balls out of the mixture and roll them in the extra shredded coconut.
